Cornmeal Lemon Biscotti





Ingredients:

All-Purpose Flour(Maida) - 2 cups
Yellow cornmeal - 3/4 cup
Baking powder - 1 1/2 tsp
Salt - 1 tsp
Eggs - 3
Sugar - 1 cup
Lemon zest - 1 tbsp
Semi-sweet & Milk chocolate chips - 1 cup

Method:

1. Preheat oven to 325 degree F.
2. Meanwhile, take a bowl, mix together flour,cornmeal,baking powder,salt and lemon zest.
3. Take another bowl, add sugar and egg and beat until pale yellow and fluffy using electric mixer.
4. Then slowly add flour mixture into the egg and sugar and beat until everthing is well combined, and keep it aside for 5 minutes.(dough will be soft and sticky).
5. Take a baking sheet,line it with the wax paper (or) parchement paper.
6. Transfer the dough to the baking sheet,Now wet your hand and form rectangle shape of the dough, make 2 rectangle shape on each side.
7. Now keep it in the oven and bake for 35 minutes till light brown. Remove and cool it for 5 to 10 minutes.
8. Using serrated knife,cut it into crosswise 1/2 inch thick.
9. Remove the wax paper from the baking sheet, and arrange the biscotti like cut side down and bake for another 25 minutes.
10. Remove and cool biscotti completely.

Chocolate Dipping:

1. Melt the chocolate chips in the microwave,stirring every 30 sec for 1 1/2 minutes totally.
2. Dip 1 biscotti into the melted chocolate and shake excess chocolate and place it in the plate.
3. Keep it in the fridge for 5 to 10 minutes till chocolate is firm.

Chocolate Dates Cake





Ingredients:

Dates- 1 cup chopped
Water - 1cup
All- purpose flour(maida)- 1 3/4 cup
Baking soda - 1 tsp
Salt -1/4 tsp
Cocoa powder - 3 tsp
Sugar - 1 cup
Unsalted butter - 1/2 cup
Egg - 2
Walnuts - 1/2 cup chopped
Semi-sweet chocolate chips-1/3 cup

Method:

1. Boil water in a pan,when its boiling add chopped dates, then switch off the heat and leave it for 5 to 10 minutes and let it cool.
2.Preheat oven to 350 degree F.
3. Butter and flour the cake pan, and keep it aside.
4. In a small bowl,mix together flour,soda,salt and cocoa powder.Set it aside.
5. In a medium size bowl add butter and sugar,beat it nicely untill it is fluffly using hand mixer,then add egg and beat it nicely.
6. Then add flour mixture and cooled dates mixture alternatively and beat it well.
7. Finally add the chopped walnuts and chocolate chips and fold it nicely in the batter.
8. Now pour the batter into the cake pan.
9. Sprinkle some chocolate chips and walnuts over the top of the batter.
10. When oven is preheated,then keep the cake pan into the oven and bake for 45 to 50 mintues (or) until toothpick inserted in the middle of the cake and comes out clean.
11. Switch of the oven,Remove cake pan from the oven,let it cool for 5 to 10 minutes.
12. Chocolate Dates cakes is done.

Black Forest Cake




  • All-purpose flour(maida)-2 cups
  • Cocoa powder-3/4 cups
  • Baking soda-3/4 tsp
  • Unsalted butter-1/2 cup(4oz)
  • Milk-1 cup
  • Whipping cream-3 cup
  • Rasberry pie filling-1 can
  • Strawberry-1/2 cup sliced and chopped
  • Sugar-2 cup
  • Salt-3/4 tsp
  • Eggs-3
  • Vanilla extract-1 tbsp
  • Powdered Sugar-1/4 cup
  • Chocolate chips-1/4 cup

Method:

1.Preheat the oven at 350 degree F.
2.Take a bowl add all the dry ingredients all purpose flour,cocoa powder,Sugar and salt mix it well.
3.Then take a big bowl add butter,egg,milk and vanilla extract beat it for 3 minutes using hand mixer till nice and smooth.
4.Then divide the dry ingredients into 3 parts and add slowly to the mixer and beat it nicely,then add 2 parts beat it,then the 3rd part beat it well till the mixture is smooth and fluffy.
5.Keep it side,now take the cake pan and grease it with the butter/spray oil (or) use a butter sheet on the bottom of the pan.Then pour the mixture into the pan.
6.When the oven is heated,a beep sound will come,then keep the pan in the oven and bake for 30 to 35 minutes (or) until wooden pick inserted in center comes out clean.Then remove pan from oven, and let cool for 5 to 10 minutes.Switch off the oven.
7.Frosting:Take a bowl add the whipping cream and add powdered sugar and beat it with the hand mixer until soft peaks form.
8.Split the cake layer into half of both the cake,take one layer keep it in cake stand,Spread the layer with the whipping cream evenly and top it with the raseberry pie filling and arrange strawbeery sliced on the corner.
9.Repeat this with all the other layer,then spread the whipping cream on all the sides and at top layer.
10.For topping use the chocolate chips and chopped strawberry and arrange it on the layer.

Note:
* You can use any pie filling of your choice.

Chocolate Chip Cookies




Ingredients:
  • All purpose flour(maida flour)-1 1/2 cup
  • Baking soda-1/2 tsp
  • Salt-1 tsp
  • Butter-1 stick(1/2 cup)
  • Sugar-3/4 cup
  • Vanilla extract-1/2 tsp
  • Egg-1
  • Chocolate chip-1 cup
  • Nuts-1/2 cup chopped

Method:

1.Preheat the oven to 375 degree F.
2.Meanwhile take a blow add all purpose flour,baking soda and salt and mix it well.
3.Take another big bowl add butter,sugar and vanilla extract beat it untill creamy using hand mixer.
4.Then add egg,beat it nicely,now slowly add the flour mixer and mix it well,till creamy.
5.Now add the nuts and chocolate chips and mix it well.
6.Take a baking tray grease it with the butter,now take a spoon of mixture and drop it in the baking tray,there should be a 2 inch gap between each cookie.
7.When oven is preheated,a beep sound will come,then keep the baking tray and  bake for 10 to 12 minutes or until edges are light brown.
8.Remove the tray from oven and cool it for 5 minutes.
9.Then have yummy chocolate chip cookies.
